Heart Healthy Fried Rice

Total Time: 27 mins Preparation Time: 15 mins Cook Time: 12 mins

Ingredients

  • Servings: 2
  • 3/4 cup rice
  • 2 tablespoons coconut oil
  • 1/2 lb ground turkey or 1/2 lb ground beef or 1/2 lb ground lamb
  • 1 tablespoon garlic clove, chopped
  • 1 tablespoon fresh ginger, chopped
  • 4 scallions, sliced
  • 1 cup frozen peas
  • 1 cup snow peas, halved
  • 4 carrots, sliced
  • 2 tablespoons hoisin sauce
  • 2 tablespoons rice vinegar

Recipe

  • 1 cook the rice according to the package directions.
  • 2 in a bowl, combine the hoisin sauce and the rice vinegar.
  • 3 meanwhile, heat the oil in a large skillet over medium-high heat. add the meat, garlic, ginger and half the scallions and cook, breaking up the meat with a spoon, until browned (3-5 minutes).
  • 4 add the rice, peas, snow peas and carrots to the pan and quickly combine. add the hoisin-vinegar sauce to the mixture and stir-fry until heated through (2-3 minutes). top with the remaining scallions.
