Ingredients

- 3/4 cup rice
- 2 tablespoons coconut oil
- 1/2 lb ground turkey or 1/2 lb ground beef or 1/2 lb ground lamb
- 1 tablespoon garlic clove, chopped
- 1 tablespoon fresh ginger, chopped
- 4 scallions, sliced
- 1 cup frozen peas
- 1 cup snow peas, halved
- 4 carrots, sliced
- 2 tablespoons hoisin sauce
- 2 tablespoons rice vinegar
Recipe
- 1 cook the rice according to the package directions.
- 2 in a bowl, combine the hoisin sauce and the rice vinegar.
- 3 meanwhile, heat the oil in a large skillet over medium-high heat. add the meat, garlic, ginger and half the scallions and cook, breaking up the meat with a spoon, until browned (3-5 minutes).
- 4 add the rice, peas, snow peas and carrots to the pan and quickly combine. add the hoisin-vinegar sauce to the mixture and stir-fry until heated through (2-3 minutes). top with the remaining scallions.
