Grandma Nancy's Oatmeal Cake

Ingredients

- 1 cup oatmeal (quick cooking)
- 1 1/2 cups flour
- 1 1/2 cups hot water
- 1 teaspoon baking soda
- 1 cup packed brown sugar
- 1 teaspoon cinnamon
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup shortening
- 1 teaspoon vanilla
- 2 large eggs
- 1 cup coconut
- 1 cup margarine
- 1/2 cup walnuts
- 3 tablespoons milk
- 1 1/2 cups packed brown sugar
- 1/2 cup uncooked oatmeal
Recipe
- 1 pour hot water over oatmeal; set aside.
- 2 cream together sugars and shortening, then add eggs.
- 3 sift together dry ingredients and add to the wet.
- 4 stir in oatmeal and vanilla.
- 5 pour into greased 9 x 13 cake pan and bake for 1 hr and 10 minutes at 350° and then top with topping.
- 6 topping: combine butter, milk and sugar in a small saucepan.
- 7 bring to a boil and continue to boil 1 minutes and add coconut, nuts and oatmeal.
- 8 spread on cake and broil until brown (watch carefully it will burn fast).
