Coconut Chocolate Banana Bread

Ingredients
- 1/2 cup coconut oil
- 2 eggs
- 4 -6 bananas (crushed)
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla
- 1/3 cup shredded coconut (unsweetened)
- 1/2 cup chocolate chips
Recipe
- 1 crush bananas.
- 2 mix bananas, coconut oil, and eggs in a kitchenaid mixer or with a hand mixer.
- 3 add flour, soda, salt, vanilla and mix again.
- 4 add coconut and chocolate chips and blend in by hand.
- 5 pour into a greased loaf pan (or muffin pan if you'd prefer muffins - cut baking time to 20-25 min.).
- 6 bake for 50-60 minutes in a preheated 350 degree oven.
