Light Coconut Basmati Rice

Ingredients
- 3/4 cup light coconut milk, reserve 2 tbsp
- 1 1/2 cups water
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1 cup basmati rice, uncooked
- 2 tablespoons fresh basil, chopped
Recipe
- 1 place coconut milk in a medium saucepan, reserving 2 tablespoons and add the water, garlic and salt.
- 2 bring to a boil over medium-high heat; stir in rice.
- 3 cover, reduce heat and simmer 20 minutes or until liquid is absorbed.
- 4 stir in reserved coconut milk and sprinkle with basil.
