Hawaiian Haupia Cake

Total Time: 1 hr 50 mins Preparation Time: 20 mins Cook Time: 1 hr 30 mins

Ingredients

  • 10 eggs, separated
  • 1 teaspoon cream of tartar
  • 1 1/2 cups cake flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup coconut milk or 1/4 cup fresh milk
  • 1/4 cup water
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla flavoring
  • 1 (12 ounce) can coconut milk (frozen)
  • 2 cups milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 6 tablespoons cornstarch
  • 1 1/2 teaspoons vanilla flavoring
  • shredded fresh coconut

Recipe

  • 1 cake:.
  • 2 beat egg and cream of tartar until stiff, but not dry.
  • 3 gradually add 1/2 cup sugar; set aside.
  • 4 sift rest of sugar, flour, baking powder and salt. mix well.
  • 5 add egg yolks into mixture. whip egg mixture lightly into other mixture.
  • 6 use 13x9x3 pan. 350 degrees, 30-35 minutes. cool on rack (invert) 45 minutes.
  • 7 frosting and filling:.
  • 8 combine all ingredients except coconut into saucepan.
  • 9 cook over moderate heat, stirring constantly, until thickened.
  • 10 cool.
  • 11 spread on haupia cake.
  • 12 sprinkle with coconut.
