Hawaiian Energy Bars

Total Time: 1 hr 6 mins Preparation Time: 6 mins Cook Time: 1 hr

Ingredients

  • 1/4 cup chopped walnuts (, toasted)
  • 1 cup raisins
  • 1/2 cup dried mango
  • 1/2 cup dried papaya
  • 1 cup whole wheat flour
  • 3 tablespoons canola oil
  • 1 tablespoon vanilla or 1 teaspoon coconut extract
  • 1/4 teaspoon salt
  • 2 whole eggs
  • 1 egg
  • 16 ounces crushed pineapple

Recipe

  • 1 combine: walnuts; raisins; dried mango; dried papaya; whole-wheat flour.
  • 2 mix well.
  • 3 combine: oil; vanilla or 1 tsp.
  • 4 coconut extract; salt; whole eggs; egg ; pineapple, mix well.
  • 5 add liquid to dry, mix well.
  • 6 spoon into sprayed 9x5 loaf pan; bake 350, approx.
  • 7 1 hr or till center comes out clean w/ knife.
  • 8 cool on rack.
  • 9 take out of pan, wrap tightly, refrigerate till cold.
  • 10 cut in 16 slices.
  • 11 stores up to 2 weeks.
