Granola Bars With Coconut And Dried Fruit

Ingredients
- 3 cups quick-cooking oatmeal
- 2/3 cup whole wheat pastry flour
- 3/4 teaspoon baking soda
- 3 tablespoons dark brown sugar
- 1 teaspoon vanilla
- 1/3 cup coconut oil
- 1/3 cup honey
- 1/4 cup coconut flakes
- 1 1/2 tablespoons dried figs
- 1 1/2 tablespoons dates
- 1 1/2 tablespoons prunes
Recipe
- 1 in a food processor, chop dried fruit.
- 2 pour boiling water to cover.
- 3 let fruit stand 2 minutes, then drain water.
- 4 mix together oatmeal, flour, baking soda, brown sugar.
- 5 mix together vanilla, oil, honey together. add to dry ingredients.
- 6 stir in the dried fruit and coconut.
- 7 mix well!
- 8 spread in a 9 x 13 inch greased pan.
- 9 bake at 325 f for 20 minutes.
- 10 allow to cool for 10 minutes.
- 11 cut into bars.
