Granola Bars With Coconut And Dried Fruit

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 3 cups quick-cooking oatmeal
  • 2/3 cup whole wheat pastry flour
  • 3/4 teaspoon baking soda
  • 3 tablespoons dark brown sugar
  • 1 teaspoon vanilla
  • 1/3 cup coconut oil
  • 1/3 cup honey
  • 1/4 cup coconut flakes
  • 1 1/2 tablespoons dried figs
  • 1 1/2 tablespoons dates
  • 1 1/2 tablespoons prunes

Recipe

  • 1 in a food processor, chop dried fruit.
  • 2 pour boiling water to cover.
  • 3 let fruit stand 2 minutes, then drain water.
  • 4 mix together oatmeal, flour, baking soda, brown sugar.
  • 5 mix together vanilla, oil, honey together. add to dry ingredients.
  • 6 stir in the dried fruit and coconut.
  • 7 mix well!
  • 8 spread in a 9 x 13 inch greased pan.
  • 9 bake at 325 f for 20 minutes.
  • 10 allow to cool for 10 minutes.
  • 11 cut into bars.
