Granola Bars (gluten Free)

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 1/2 cup sugar
  • 1/3 cup coconut oil
  • 1 egg
  • 1/4 cup honey
  • 2 tablespoons peanut butter
  • 1 teaspoon vanilla
  • 3/4 cup flour (see recipe description)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups crisp rice cereal
  • 1/2 cup ground flax seeds
  • 1/2 cup nuts or 1/2 cup fruit, chopped
  • 1/2 cup coconut
  • 1/2 cup chocolate chips
  • 2 tablespoons acai berries, dried powder
  • 2 tablespoons goji berries, dried powder

Recipe

  • 1 preheat oven to 350°f.
  • 2 mix sugar and oil. add egg, and then honey, peanut butter, and vanilla.
  • 3 in a seperate bowl combine flour, baking soda, salt, ground flax, goji and acai.
  • 4 combine together.
  • 5 mix in rice cereal, fruit/nuts, coconut, chocolate chips.
  • 6 oil a 9 x 13 pan.
  • 7 press mixture into pan.
  • 8 bake for 20 minutes.
