Glad Thai Dings

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 1 1/2 lbs ground beef
  • 1/4 cup hoisin sauce
  • 1/4 cup breadcrumbs, unseasoned
  • 3 tablespoons finely minced green onions
  • 1 tablespoon minced fresh cilantro
  • 1 free-range egg
  • 2 teaspoons garlic
  • 1 teaspoon gingerroot
  • 1 teaspoon toasted sesame oil
  • 1 cup coconut milk
  • 1/3 cup hoisin sauce
  • 2 tablespoons peanut butter
  • 2 tablespoons minced fresh cilantro or 2 tablespoons basil
  • 1 tablespoon grated gingerroot
  • 1 teaspoon lemon zest
  • 1/8 teaspoon crushed red pepper flakes

Recipe

  • 1 preheat oven 400°f spray a cookie sheet with cooking spray and set aside.
  • 2 to make meatballs, combine all the meatball ingredients in a large bowl and mix using your hands works best. form mixture into approximately 40 1-1 1/2 inch balls. place on cookie sheet.
  • 3 bake for 18-20 minute until cooked through and nicely browned on the outside.
  • 4 while meatball are cooking prepare the sauce. in a deep, nonstick skillet whisk together all sauce ingredients. heat over med-high heat, stirring constantly, until sauce boils. reduce heat to medium and cook uncovered, for 3 min, stirring often, sauce will thicken a bit.
  • 5 add cooked meatballs to sauce and mix well. serve hot.
