Crabmeat & Coconut Soup

Ingredients

- 1 tablespoon olive oil
- 2 tablespoons thai curry paste
- 1 red bell pepper (sliced)
- 2 1/2 cups coconut milk
- 2 1/2 cups fish stock
- 2 tablespoons fish sauce
- 8 ounces fresh lump crabmeat
- 8 ounces shrimp
- 8 ounces oysters
- 8 ounces scallops
- 2 tablespoons cilantro
- 3 stalks green onions, chopped
Recipe
- 1 heat olive oil medium hi.
- 2 add thai curry paste and red bell pepper. cook for 10 minutes stirring frequently.
- 3 add coconut milk and fish stock and fish sauce.
- 4 boil.
- 5 add rest of the ingredients and simmer for 5 minutes.
