My Version Of Australian Jack

Ingredients
- 2 teaspoons water
- 1 1/2 cups oatmeal
- 3 tablespoons flaked coconut
- 1 tablespoon candied ginger, finely chopped
- 1 tablespoon rum, dark
- 1/4 lb butter, unsalted
- 1/3 cup sugar, dark brown
- 1/4 teaspoon baking soda
Recipe
- 1 preheat oven to 300 degrees f.
- 2 cream the butter; add the sugar and beat until light and fluffy.
- 3 dissolve the baking soda in the water and add, stirring well.
- 4 now add the oatmeal, coconut, ginger and rum, mixing well.
- 5 the mixture should be fairly firm. if necessary, add a little more oatmeal.
- 6 knead lightly on a floured surface. press the mixture in a buttered baking dish, about 8 x 12 inches.
- 7 the dough should be about 1/2 inch thick.
- 8 bake at 300 degrees for 35 minutes, or until brown on top.
- 9 cut into squares while hot and enjoy.
