My Version Of Australian Jack

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • 2 teaspoons water
  • 1 1/2 cups oatmeal
  • 3 tablespoons flaked coconut
  • 1 tablespoon candied ginger, finely chopped
  • 1 tablespoon rum, dark
  • 1/4 lb butter, unsalted
  • 1/3 cup sugar, dark brown
  • 1/4 teaspoon baking soda

Recipe

  • 1 preheat oven to 300 degrees f.
  • 2 cream the butter; add the sugar and beat until light and fluffy.
  • 3 dissolve the baking soda in the water and add, stirring well.
  • 4 now add the oatmeal, coconut, ginger and rum, mixing well.
  • 5 the mixture should be fairly firm. if necessary, add a little more oatmeal.
  • 6 knead lightly on a floured surface. press the mixture in a buttered baking dish, about 8 x 12 inches.
  • 7 the dough should be about 1/2 inch thick.
  • 8 bake at 300 degrees for 35 minutes, or until brown on top.
  • 9 cut into squares while hot and enjoy.
