My Favorite Carrot Cake With Magic Topping

Ingredients

- 3 large eggs
- 2 cups sugar
- 1 1/4 cups oil
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 cup coconut
- 1 cup chopped walnuts
- 1 cup crushed pineapple (drained)
- 2 cups grated carrots (raw)
- 1 teaspoon vanilla
- 3/4 cup coconut
- 3/4 cup packed brown sugar
- 1/2 teaspoon salt
- 1/3 cup shortening
- 2 tablespoons milk
Recipe
- 1 beat together eggs, sugar, and salad oil.
- 2 add flour, salt, soda, and cinnamon.
- 3 to the batter add coconut, walnuts, pineapple, carrots and vanilla. mix well and pour into a greased 9 x 13 pan and bake at 350° for 40-45 minutes or until knife inserted in middle comes out clean.
- 4 magic topping.
- 5 combine all ingredients in medium saucepan over medium heat. cook stirring constantly until sugar melts. spread on top of warm carrot cake and bake at 375° for 10 to 12 minutes.
