My Favorite Carrot Cake With Magic Topping

Ingredients

  • Servings: 12
  • 3 large eggs
  • 2 cups sugar
  • 1 1/4 cups oil
  • 2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup coconut
  • 1 cup chopped walnuts
  • 1 cup crushed pineapple (drained)
  • 2 cups grated carrots (raw)
  • 1 teaspoon vanilla
  • 3/4 cup coconut
  • 3/4 cup packed brown sugar
  • 1/2 teaspoon salt
  • 1/3 cup shortening
  • 2 tablespoons milk

Recipe

  • 1 beat together eggs, sugar, and salad oil.
  • 2 add flour, salt, soda, and cinnamon.
  • 3 to the batter add coconut, walnuts, pineapple, carrots and vanilla. mix well and pour into a greased 9 x 13 pan and bake at 350° for 40-45 minutes or until knife inserted in middle comes out clean.
  • 4 magic topping.
  • 5 combine all ingredients in medium saucepan over medium heat. cook stirring constantly until sugar melts. spread on top of warm carrot cake and bake at 375° for 10 to 12 minutes.
