Fresh Coconut Cake

Total Time: 8 hrs 1 min Preparation Time: 1 min Cook Time: 8 hrs

Ingredients

  • 4 cake layers (or yellow)
  • 2 cups sour cream
  • 16 ounces cool whip
  • 1 cup sugar
  • 1 coconut (only substitue fresh frozen coconut if you can find it, do not use dried)

Recipe

  • 1 bake cake and cool completely.
  • 2 open coconut, remove outer hard shell, pare inner brown shell, rinse and grate.
  • 3 mix sugar, sour cream and coconut.
  • 4 fold in cool whip.
  • 5 spread frosting between layers of cake and outsides of cake.
  • 6 refrigerate overnight.
