Coconut Cake

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 12
  • 1 1/2 cups sugar
  • 2 cups flour
  • 1 teaspoon baking soda
  • 3/4 cup coconut
  • 1 teaspoon salt
  • 2 eggs
  • 2 cups crushed pineapple (with juice)
  • 1/2 cup brown sugar
  • 1/4 cup nuts (chopped)
  • 1 cup evaporated milk
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1 teaspoon vanilla

Recipe

  • 1 mix together sugar, flour,soda, coconut,salt, slightly beaten eggs & pineapple with juice.
  • 2 pour into a greased and floured 9x13 pan.
  • 3 top with brown sugar and nuts.
  • 4 bake at 350 degrees for 40-45 minutes.
  • 5 while cake is baking; cook evaporated milk,sugar,butter and vanilla in a saucepan until boiling.
  • 6 pour over cake as soon as it is removed from oven.
  • 7 prick cake with fork so topping will be absorbed.
