Mama's Mango Bread

Total Time: 1 hr 5 mins Preparation Time: 5 mins Cook Time: 1 hr

Ingredients

  • Servings: 16
  • 2 cups flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1 1/2 cups sugar
  • 1/2 teaspoon salt
  • 3 eggs, slightly beaten
  • 1 teaspoon vanilla
  • 1 cup salad oil
  • 2 cups mangoes, diced (not too ripe or stringy)
  • 1/2 cup walnuts, chopped
  • 1/2 cup coconut, fresh or frozen
  • 1/2 cup raisins

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 in a mixing bowl combine first 5 ingredients.
  • 3 to them, add all remaining ingredients.
  • 4 grease 2 large loaf pans and bake for 55-60 minutes or until a toothpick (or fork) poked into the center comes out clean.
