Lime Coconut Shortbread

Ingredients

  • Servings: 30
  • 185 g butter
  • 1 teaspoon coconut essence
  • 2 teaspoons grated lime rind
  • 1/3 cup caster sugar
  • 1 1/2 cups plain flour
  • 1/4 cup rice flour
  • 1/3 cup shredded coconut

Recipe

  • 1 beat butter, sugar, essence and rind in a medium bowl with electric mixer until smooth.
  • 2 stir in fours and coconut in two batches; knead lightly.
  • 3 roll dough between sheets of baking paper until 4mm thick; cut into 6cm shapes, place 3cm apart on greased oven trays.
  • 4 bake in moderate oven 10 minutes or until firm.
  • 5 stand 3 minutes before lifting onto wire racks to cool.
