Lime Coconut Shortbread

Ingredients

- 185 g butter
- 1 teaspoon coconut essence
- 2 teaspoons grated lime rind
- 1/3 cup caster sugar
- 1 1/2 cups plain flour
- 1/4 cup rice flour
- 1/3 cup shredded coconut
Recipe
- 1 beat butter, sugar, essence and rind in a medium bowl with electric mixer until smooth.
- 2 stir in fours and coconut in two batches; knead lightly.
- 3 roll dough between sheets of baking paper until 4mm thick; cut into 6cm shapes, place 3cm apart on greased oven trays.
- 4 bake in moderate oven 10 minutes or until firm.
- 5 stand 3 minutes before lifting onto wire racks to cool.
