Island Yams

Ingredients

  • Servings: 6
  • 6 yams, peeled and cubed
  • 1 -2 cup sweetened coconut milk
  • 1/2 cup dark rum
  • 1/2 cup butter
  • 1 -4 cup evaporated milk
  • salt and pepper
  • grated nutmeg

Recipe

  • 1 place yams in dutch oven and cover with water. bring to boil and cook yams until soft, about 45 minutes.
  • 2 drain. mash with potato masher or large fork. add sweetened coconut milk, rum, butter, evaporated milk, salt and pepper. stir well until all ingredients are combined and smooth.
  • 3 grate fresh nutmeg over potatoes, fold into mixture. grate more nutmeg on potatoes and fold into mixture again.
