Hot And Sweet Noodles

Ingredients

- 200 g long noodles or 200 g spaghetti
- 20 small onions
- 1 inch fresh ginger
- 3 cloves garlic
- 10 dried red chilies
- 5 red ripe fresh chili peppers
- 2 cups coconut milk
- 1 1/2 cups cottage cheese, cut into cubes (paneer)
- salt
- sugar
- 1 liter water
- 3 tablespoons oil, divided
- oil, to deep fry
- 2 tablespoons spring onions, finely chopped,to garnish (only greens)
Recipe
- 1 boil 1 litre of water in a pot after adding 1 tbsp.
- 2 oil and a little salt.
- 3 add the broken spaghetti.
- 4 cook for 10 minutes till it becomes soft.
- 5 drain.
- 6 wash with cold water.
- 7 keep aside.
- 8 soak the chillies in half a cup of water for 30 minutes.
- 9 deep fry the cottage cheese pieces till they are golden brown.
- 10 grind onions, ginger, garlic and red chillies in a blender bowl to a fine paste.
- 11 in a pan, add 2 tbsps.
- 12 of oil and fry the ground paste for 5 minutes.
- 13 add 1 cup of water.
- 14 cook for 5 minutes.
- 15 add 1/2 a tsp.
- 16 of sugar and salt to taste.
- 17 add coconut milk.
- 18 boil for 2 minutes.
- 19 add the cottage cheese pieces.
- 20 remove from flame.
- 21 place the spaghetti in a plate.
- 22 pour the above prepared gravy over it.
- 23 garnish with spring onions.
- 24 serve hot.
