Easy Coconut Cake

Ingredients

  • Servings: 8
  • 1 (18 1/2 ounce) box cake mix
  • 3 egg whites (or as called for by your cake mix)
  • 1/3 cup oil (or as called for by your cake mix)
  • 1 1/3 cups water (or as called for by your cake mix)
  • 1 (8 1/4 ounce) can crushed pineapple, drained
  • 1 1/2 cups icing
  • 1 1/2 cups shredded coconut

Recipe

  • 1 make cake as following directions on box.
  • 2 pour into two 9-inch round cake pans.
  • 3 bake at 350f for 28-30 minutes. cool on wire racks.
  • 4 drain pineapple well - put on top of one layer - then put some of the icing on top of pineapple.
  • 5 put the two layers together. use the remaining frosting all over the cake.
  • 6 cover the entire cake with coconut.
