Ingredients
- 175 g shortcrust pastry
- 45 ml jam (3 tbsp)
- 25 g butter
- 1 egg
- 50 g caster sugar
- 100 g desiccated coconut
- 2 1/2 ml baking powder (1/2 tesp)
Recipe
- 1 roll out pastry and line 20cm sandwich tin. prick base and spread with jam.
- 2 melt butter, stir in egg, sugar, coconut and baking powder. mix well.
- 3 spread mixture into pastry case.
- 4 bake 350f 30-35 minutes.
