Chocolate Chip Oatmeal Muffins

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • 3 cups oat flour
  • 1 cup coconut flour
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons sea salt
  • 1/4 cup canola oil
  • 1/2 cup honey
  • 1/4 cup molasses
  • 1 teaspoon vanilla
  • 1 1/2 cups buttermilk
  • 1 cup milk
  • 6 egg whites
  • 4 egg yolks
  • 2 cups chocolate chips

Recipe

  • 1 preheat oven to 375*. prepare two muffin tins with paper/parchment liners.
  • 2 combine oat flour, coconut flour, baking powder, baking soda, and sea salt.
  • 3 in a separate bowl, beat egg whites until they form peaks.
  • 4 in a third bowl, whisk together canola oil, honey, molasses, vanilla, buttermilk, milk, and egg yolks.
  • 5 add the wet mixture to the dry and mix until just combined.
  • 6 stir in the chocolate chips.
  • 7 fold in the egg whites using a flat spatula.
  • 8 using a disher, scoop into lined muffin tin (fill 75%-100%).
