Lemon Snow Freeze

Ingredients
- 1 cup graham cracker crumbs
- 6 tablespoons sugar
- 3 tablespoons butter, melted
- 2 eggs, separated
- 1 (1 1/3 cup) can sweetened condensed milk
- 1 teaspoon lemon rind, grated
- 1/2 cup lemon juice
- 1 1/2 cups angel flake coconut (the recipe calls for a can)
Recipe
- 1 combine graham cracker crumbs with 2 tablespoon of the sugar, and melted butter.
- 2 press mixture on bottom and sides of lightly buttered pie pan.(the recipe calls for a refrigerator tray but i don't have a clue what that is).
- 3 beat egg yolks until thick.
- 4 combine with condensed milk.
- 5 add lemon rind and juice gradually, stirring until thick.
- 6 stir in 1 cup coconut.
- 7 whip egg whites until foamy.
- 8 gradually beat in rest of sugar, then beat until stiff.
- 9 fold into lemon mixture.
- 10 pour into tray (pie pan)
- 11 sprinkle top with remaining coconut.
- 12 chill in freezer until firm about 4 to 6 hours.
