Lemon Snow Freeze

Total Time: 4 hrs 15 mins Preparation Time: 15 mins Cook Time: 4 hrs

Ingredients

  • 1 cup graham cracker crumbs
  • 6 tablespoons sugar
  • 3 tablespoons butter, melted
  • 2 eggs, separated
  • 1 (1 1/3 cup) can sweetened condensed milk
  • 1 teaspoon lemon rind, grated
  • 1/2 cup lemon juice
  • 1 1/2 cups angel flake coconut (the recipe calls for a can)

Recipe

  • 1 combine graham cracker crumbs with 2 tablespoon of the sugar, and melted butter.
  • 2 press mixture on bottom and sides of lightly buttered pie pan.(the recipe calls for a refrigerator tray but i don't have a clue what that is).
  • 3 beat egg yolks until thick.
  • 4 combine with condensed milk.
  • 5 add lemon rind and juice gradually, stirring until thick.
  • 6 stir in 1 cup coconut.
  • 7 whip egg whites until foamy.
  • 8 gradually beat in rest of sugar, then beat until stiff.
  • 9 fold into lemon mixture.
  • 10 pour into tray (pie pan)
  • 11 sprinkle top with remaining coconut.
  • 12 chill in freezer until firm about 4 to 6 hours.
